Welcome to the BEST OF APRIL where we officially say, HELLO May (a.k.a. Summer Break, Memorial Day BBQ’s, and hopefully less showers and more flowers!!!).
Let’s get started with what I made in the kitchen in April. SPOILER, the past month was all about breakfast. With a major kitchen renovation happening, fancy and complicated just haven’t been an option (not that I’m complaining) and who doesn’t love breakfast ?

I’m ending April with a some really exciting news that I’ve been sitting on since January (nope, not pregnant)!! I’ve spent the last 3 months creating a LIVE course for busy mamas who value getting healthy dinners on the table, but struggle with making it happen. Meal plan, grocery list, prep guide and step-by-step recipes, I provide it all. Best part.. since the group takes place in a private Facebook group, I can stream LIVE from my kitchen and we can make healthy dinner happen for our families together!

With my kitchen still in shambles (although progress is being made) I am hoping that May is the month that I get to get back to some real cooking and come up with some new fresh meal plans. Realistically, since the kids get out of school in 19 days and the pool opens this month, we’ll see how we do! One thing is for sure, the ice cream maker and popsicle molds will be making an appearance this month!
