Description

These Whole-Food Cut Out Cookies are simple to make, requiring only 1-bowl and 5 ingredients. Naturally sweetened, whole-grain and perfect for decorating!


Ingredients

Scale
  • 2 cup salted butter, room temperature
  • 1/2 cup honey
  • 1 large egg
  • 1 tsp vanilla
  • 2 1/2 cups spelt flour

Instructions

  1. Preheat oven to 325 degrees.
  2. In the bowl of a stand mixer, combine all ingredients using the paddle attachment.
  3. Divide dough into 2 parts. Wrap each half in plastic wrap and refrigerate for a minimum of 30 minutes.
  4. Remove first half of dough from fridge and roll out on a floured surface until it is about a quarter of an inch thick.
  5. Cut with cookie cutters and arrange on baking tray. Cookies will expand slightly, so leave room between. Place cookie sheet in the freezer for 10 minutes.
  6. Bake for 10-15 minutes on a silicone baking sheet or parchment paper.
  7. Cool on a baking rack.
  8. Repeat with the second ball of dough.
