FOR THE WINGS:

  • 10 whole chicken wings, cut into flats and drumettes (20 pieces total)
  • 1 TBS baking powder
  • 1/2 tsp salt

FOR THE SAUCE:

  • 1/2 stick butter
  • 1 garlic clove, minced
  • 3/4 cup hot sauce (I like Frank's)
  • 1 TBS honey

Instructions

  1. Preheat oven to 250 and place a baking rack onto a cookie sheet that has been covered in foil.
  2. In a large bowl, toss the flats and drumettes with baking powder and salt. Place wings on the rack in a single layer and cook for 30 minutes.
  3. In a small pot over medium heat, add the butter and garlic. Stir continuously until butter is melted and garlic is fragrant. Add hot sauce and honey. Stir until smooth. Remove from heat and set aside.
  4. After 30 minutes, leave them in there and raise the heat to 425 until brown and crispy, about 35 -40 minutes.
  5. Take wings out and let rest for 5 minutes. Toss in the hot sauce mixture and serve.

Notes

  1. Instead of discarding the tips, save them and use them to make a stock.

  3. Make sure that you select a baking powder (NOT baking soda) that is aluminum free.
  4. To add an extra layer of crispiness.. just before removing wings from the oven, allow them to broil for up to a minute (watch closely, they can burn FAST).
