    Welcome to the best of February where we officially say GOODBYE WINTER and HELLO Spring aka... warm weather (ok, ok... not quite yet, but it's coming), blue skies and All. The. Spring. Produce!!!

    Buuuut, before we shift gears to focus on all things sunshine,  let's say a quick goodby to February, starting with what I made this month in the kitchen.  SPOILER..  it wasn't much. I've been under the weather for the better part of 2 weeks and cooking, well.. it didn't happen much. Truth.. we relied on LOTS of freezer-meals which will now need to be completely restocked, but I was so thankful that I had them on hand.

    Sooo, in the spirit of complete honesty this month's roundup is supplemented with some of my favorite freezer/make-ahead meals that we enjoyed. You know, the kind of recipes that are great to have on hand when you don't have the energy to make dinner a priority.
