    Welcome to the BEST OF JANUARY POST where we officially said, HELLO February (aka..Valentine's Day and Super Bowl Sunday)! First, let's recap all the delicious things that we made and the cool things that have been happening around Simply Sissom in the last month.

    Let's get started with what I made in the kitchen in January, SPOILER.. the past month was all about HEALTHY RESOLUTIONS (aka.. green smoothies, homemade juices, whole-food recipes and ALL the veggies).

    JANUARY HAPPENINGS:

    I am currently REALLY into "batch-prepping" my lunches. In other words, I pick a recipe or 2, make it and then portion it out to be eaten throughout the week. Lunch is the meal that I struggle with  "whole-foods" the most. Honestly, it's because my kids aren't home. When I have family to feed, I get it done. When it's just me, I often tell myself that I will just "wing it." For me, this can lead to poor choices. Spending 20 or 30 minutes each Sunday making sure that I have healthy nutritious lunches ready to go has been super helpful. Here are some of my favorites so far! You can check out my Instagram Stories for info/recipes about batch prepping that don't get shared on the blog.

    Healthy Chicken Salad

    4 Ingredient Salsa Verde Chicken (I skip on the tortillas and put the chicken on lettuce.. otherwise known as a salad, lol.)

    Cravings:

    I'm going to level with you.. lately dinner time isn't so much about what I'm craving as it is recipes that are super simple, with ordinary ingredients and not a lot of dishes. Look for lots of simple whole-food meals coming your way in February (and maybe a few special Valentine's Day posts as well).
