Best of March 2019, a round-up of March recipes and happenings at Simply Sissom.
Well, hi friends! It's Spring Break here in Kentucky, and I for one couldn't be happier about the official end of the longest Winter evvvvvaaa. The big boys are visiting their grandparents in Tennessee for The. Whole. Week. so it's just me and my littlest guy. I'm using the extra time to clean out the boys rooms (AKA.. get rid of all the things they won't even miss, but think they can't live without) and to work on some new fun recipes + a super exciting top secret project coming to Simply Sissom this Summer. My how Spring Break has changed over the years.
The sun's out, we're between sports seasons and life seems to be calm for now. I was able to stick to a regular posting schedule this month, but kept with simple + easy recipes as always. 3-Ingredient Hummus Crusted Chicken was without a doubt the reader's favorite this month with over 25,000 pins on Pinterest already! My go-to meal has been my Easy Arugula Salad with Lemon Vinaigrette, but the boys (Joe included) have been all about the Cherry + Vanilla Baked Oatmeal Cups. Choosing a favorite was hard this month.
Let's take a look at what else was happening in the kitchen:
- Easy Arugula Salad with Lemon Vinaigrette// 2. Winter Pesto Pasta with Italian Sausage// 4. Cherry + Vanilla Baked Oatmeal Cups// 5. Peanut Butter Chocolate Protein Bars// 6. 3-Ingredient Hummus Crusted Chicken
One cool March find that I want to share with you is Trader Joe's. I know, I know.. I'm the last to figure this out. You guys, I didn't even know what I was missing. Our TJ's isn't convenient to my house, so I just never went. The amount of pre-chopped veggies, real-food frozen options and sauces + spices blew my mind. Oh, and cauliflower gnocchi has been life-changing (once I figured out how to cook it). Over on Instagram Stories last week I did 5 days of no-prep required + quick + easy Trader Joe's dinners that came together with less than 10 minutes hands on prep. If you are interested you can check it out by clicking on the highlights on my Instagram account.
