    September has officially come to a close, but here in Kentucky... temperatures are still regularly hitting the 90's.  Sigh. Soccer season is in full swing for both boys, which means that family dinners have been occurring somewhere between rarely AND never. I served up Sheet Pan Quesadillas an embarrassing number of times and "brinner" featuring Instant Pot Egg Bites was a definite go-to.

    I held back on the pumpkin-y Fall recipes out of respect for the month of September, only featuring 1 ... Pumpkin Cheesecake Swirl Muffins (you guys, just make this happen). In October, prepare yourself. We will be splitting the month between Instant Pot Recipes AND All. Things. Pumpkin.  If you don't have an Instant Pot yet, no worries. I have full plans to share crockpot and/or stovetop adaptations.

    That said, before we officially welcome October, we should probably give September it's moment. Let's take a look back at all the recipes and posts from Simply Sissom in September!

    BEST OF SEPTEMBER RECIPES:

    September was a great month for recipes, with the focus being All. Over. The. Place. Quick and Easy dinners, lunch-options for adults and a chunky vegetable soup that is my absolute go-to when I over-indulge. Yep, September was definitely was a bit lacking in "theme," but for sure made up for it in taste.

    This month you can find recipes for Spaghetti Squash with Meat Sauce, Thick and Chunky Vegetable Soup, Greek Yogurt Tuna Salad Stuffed Peppers (Mayo Free), Instant Pot Egg Bites, Chipotle Chicken Sheet Pan Quesadillas and Whole Wheat Pumpkin Cheesecake Muffins.

    MOST POPULAR RECIPE OF SEPTEMBER 2019:

    It's a good one! This Thick and Chunky Vegetable Soup is a recipe that I go back to again and again. It does not contain meat, but sometimes if I want to use it as dinner (instead of a low-cal lunch option for me) I add some cooked sausage or rotisserie chicken. It's make-ahead and freezer friendly, so double the recipe to ensure that you always have some on hand!
