Welcome to the end of May post where we officially say HELLO SUMMER BREAK (finally!!) and recap all the delicious things that we made and the cool things that we discovered in the last month.

Did you give any of these recipes a try this month? My favorites were without question the peanut butter chocolate protein bars (peanut butter + chocolate = ?) and the 30 - minute chicken pesto pizza. So simple.
May Happenings: ⅓ Plant Based - A 7 Day Challenge.
If you follow along with the blog you may have noticed that there have been more plant-based recipes happening lately. I'm kinda into the idea. Don't get me wrong, I can't give up dairy, meat and sugar all the time, but I gotta admit, when I eliminate those food groups, I eat a lot more veggies, whole-grains and fruits. There isn't any denying that's a good thing. As a mom and resident household chef, I can't justify making 2 entirely different meals each night so that I can stick with the plant-based thing. Buuuut, making a daily plant-based lunch for myself is more than manageable. I like to think of myself as ⅓ Plant Based? (i.e. 1 out of 3 meals per day). I spend about 1 hour on Saturday prepping my lunches for the week, and you guys.. they are filling, delicious and contain plenty of protein. I don't feel like I'm missing out a bit. I did this throughout the month of May (no other changes to my diet) and dropped 5 lbs. Pretty crazy.

Shop: Cuisinart Ice Cream Maker - My Mother's Day gift.. and I LOVE it! The rule of no kitchen appliances as gifts doesn't apply at our house. Being able to make our own homemade ice-cream has been a lot of fun, and it allows me to control the quantity and quality of the ingredients. The kids love making it.. and fortunately for me, so does Joe?. I've been messing around with all different types of recipes. Look for yummy whole-food ice-cream recipes coming to the blog soon!
Watch: Nashville - If you haven't checked out this show, you need to. There are no words for how sad I am that the final episode aired this month. And .. I am definitely less than pleased with how they left the series hanging. With that said, there are talks of Nashville being picked up by another network.. my fingers are definitely crossed!
Read: What She Knew, By: Gilly Macmillan - The story of a mother who takes her 8 year old for a walk in the woods. When he asks to run ahead, she has no reason to worry, or so she thought (que dramatic music). Check it out!
Listen: Audible - I have heard countless podcasts/commercials for this company and am so glad I finally gave it a try. Basically.. it's an online library of audio books. In other words, you can listen to them while you drive, exercise, fold laundry, do dishes.. you get the idea. It makes car line and mundane chores so much more enjoyable. They offer a free book (I listened to What She Knew)/30 day trial. Make sure that you remember to cancel if you don't like it or it does automatically renew. For $14.95/month you can download 1 book per month. My book was 12 hours long! So much laundry folded?.
Cook: THIS Grilled Chicken Sausage, Spinach and Mozzarella Pizza from Pinch of Yum is So. Good. We have already made it 3 times. It doesn't hurt that it is super simple to throw together!
