Don't be mad at me.
It was my intention to post a recipe for a complete family meal.
I made part of the meal (see picture of juicy, sweet, mango peach salsa below), aaaaannnnddddd.... Joe called to say he wasn't going to make it home for dinner.
Suddenly, I was way too tired to make a complete meal for 2 children who would honestly prefer a PB and J (with a side of blue corn chips and mango peach salsa of course!).
So don't be mad at me for posting something wonderfully snacky. You didn't want to make dinner anyway... right?
In theory, this peach mango salsa would have been fantastic on fish tacos?. I can confirm that it goes well with chips! You could also serve it on a salad or just eat it straight out of the bowl. It's that good.
Time Saving Tips and Tricks:
PREP: This is the perfect prep ahead dish. Dice and chop everything up (or just some things) and you will be ahead of the game when you are ready to assemble the salsa.
MAKE AHEAD: This salsa can be made ahead (but not too far). I mix add the avocados right before serving so that they don't turn an ugly brown color!

Ingredients
- 2 TBS red onion, minced
- 3 TBS fresh squeezed lime juice
- 2 ripe mangos, cubed
- 2 large avocados, cubed
- 1 cup peeled peaches, cubed
- ½ cup fresh cilantro, chopped
- freshly ground pepper (optional)
Instructions
- In a large mixing bowl, combine ingredients. Stir to mix. Cover and refrigerate.
