Pin Rosemary Parmesan Popcorn for later!
Okay, okay, okay. Hold on for a second.
Rosemary Parmesan Popcorn is happening today and it's smelling reeeeeel fabulous at my house.
This popcorn is my new everything. Hints of fresh herbs, nutty parmesan and garlic unite in a giant bowl of piping hot popcorn and the result, well... it's everything. I think I am legitimately going on 8 days straight of having this real-food perfection as an evening snack and I have exactly 0 plans to make it stop. Maybe I'm already planning on another batch going down this evening, and maybe I plan to eat Every. Single. Bite of it while taking in night #2 of Celebrity Big Brother. Who's gonna judge me???
You know when you reach a point in Winter where you have to start bribing yourself to do things? You know, do a load of laundry and then you can watch Ellen until a commercial break, at which point you must start another load before continuing to watch??
If I... (ride my bike), I can... have (a brownie after dinner).
When I ... (go grocery shopping), I can.. (pick out a new bath bomb).
As soon as I finish.. (photographing popcorn), I can... (eat it all).
I know some you you know what I'm talking about. I mean, I can't be the only one... right?????? You know the Winter Ickies (<--it's a thing). You know these feelings. I see you, and I say.. friend, treat yourself to some Rosemary Parmesan Popcorn and little trash T.V. , hot bath, good book, etc. This popcorn pairs well with All. The. Things.
If there's something that makes you feel like you can handle life, it's popping a big ol' batch of Rosemary Parmesan Popcorn, and as a result, enjoying a whole-food friendly snack that is such a better idea than a pint of ice-cream or bag of potato chips. Enjoy each savory, salty, herb-infused bite and revel in the fact that Winter doesn't last forever.
Sometimes a little down time is just legitimately healing, you know?

Prep: This recipe comes together so quickly that there really isn't any need to prep ahead.
Make Ahead: Sure.. this Rosemary Parmesan Popcorn can be made a few hours in advance. I have found that it loses some of it's crunch when stored overnight, but it's still delicious.

Description
Rosemary Parmesan Popcorn is simple to make, requiring just 5 ingredients and about 10 minutes cooking time. Perfect for movie night, game day or everyday snacking.
Ingredients
- 2 sprigs fresh rosemary, divided
- 1 garlic clove, smashed
- 5 TBS olive oil, divided
- ½ tsp garlic salt
- ⅓ cup popcorn kernels
- 3 Tbs freshly grated parmesan cheese
Instructions
- Mince 1 sprig of rosemary.
- Place remaining sprig of rosemary and smashed garlic into the bottom of a small pot. Add 3 Tbs olive oil to the pot and heat over low. Stir in garlic salt. Heat until warm, but not simmering. Remove oil from stove and set aside.
- To a large pot with lid, add 2 Tbs olive oil and 3 kernels of popcorn. Raise heat to high, cover and wait to hear all 3 pop. Remove the pan from heat, take out the popped kernels. Add in the remaining popcorn kernels.
- Put the pot back over the stove on high heat. Within a few minutes the popcorn will begin to pop. Shake the pan frequently to ensure even heating.
- Once the popping slows down and nearly stops, remove pan from heat and let it sit for 1 minute to let any last kernels pop. Pour into a large serving bowl.
- Top with seasoned olive oil, minced rosemary and parmesan cheese. Mix. Add additional garlic salt, salt or pepper to taste. Serve immediately.
Notes
- You can use pre-grated parmesan cheese for convenience, but grating your own tastes SO much better and eliminates anti-clumping agents that really aren't great for you.
- If you own an air popper you can use it instead of popping the popcorn on the stove. Just make the flavored olive oil according to recipe directions and then skip to step 6.
