Description

Rosemary Parmesan Popcorn is simple to make, requiring just 5 ingredients and about 10 minutes cooking time. Perfect for movie night, game day or everyday snacking.


Ingredients

  • 2 sprigs fresh rosemary, divided
  • 1 garlic clove, smashed
  • 5 TBS olive oil, divided
  • 1/2 tsp garlic salt
  • 1/3 cup popcorn kernels
  • 3 Tbs freshly grated parmesan cheese

Instructions

  1. Mince 1 sprig of rosemary.
  2. Place remaining sprig of rosemary and smashed garlic into the bottom of a small pot. Add 3 Tbs olive oil to the pot and heat over low. Stir in garlic salt. Heat until warm, but not simmering. Remove oil from stove and set aside.
  3. To a large pot with lid, add 2 Tbs olive oil and  3 kernels of popcorn. Raise heat to high, cover and wait to hear all 3 pop. Remove the pan from heat, take out the popped kernels. Add in the remaining popcorn kernels.
  4. Put the pot back over the stove on high heat. Within a few minutes the popcorn will begin to pop. Shake the pan frequently to ensure even heating.
  5. Once the popping slows down and nearly stops, remove pan from heat and let it sit for 1 minute to let any last kernels pop. Pour into a large serving bowl.
  6. Top with seasoned olive oil, minced rosemary and parmesan cheese. Mix. Add additional garlic salt, salt or pepper to taste. Serve immediately.

Notes

  • You can use pre-grated parmesan cheese for convenience, but grating your own tastes SO much better and eliminates anti-clumping agents that really aren't great for you.
  • If you own an air popper you can use it instead of popping the popcorn on the stove. Just make the flavored olive oil according to recipe directions and then skip to step 6.
