    Okay. Soooo I'm not Super Mom.

    (FACT: My kids have had peanut butter sandwiches for dinner 3 nights in a row)

    I AM, however, doing the best that I can.

    I don't know about you guys but Fall weather (gray and rainy here in Kentucky) gets me feeling kinda BLAH. Getting motivated to search for recipes, go to the  grocery store, cook dinner AND clean up the dishes has been a struggle this week.

    I have found that if I don't take the time on Sunday to plan our meals and go to the grocery store, dinner time (if it happens at all) is kinda a mess around here. Annnnd, then.... enter peanut butter sandwiches.

    In an effort to improve my attitude in regard to the impending season.. TODAY I am sharing a SUPER Simple Meal Plan that embraces ALL things Fall.

    THE PLAN:

    I have made A LOT of these meal plans. Aaaaannnnd, I have gotten LOTS of feedback. One of the most common things that I hear is that people don't need 5 meals per week, because they just aren't home to cook dinner that often. I got the message. I want my meal plans to be useful and realistic. For that reason, this plan includes 3 simple whole-food dinners. Because, well... thats what feels manageable this week. Quite honestly, 3 home-cooked healthy meals would be a step up from what was going on in my kitchen this week?.

    THE RECIPES:

    White Bean Chicken Chili: 

    Hearty, 1-bowl White Chicken Chili has seasoned chicken, white beans, tons veggies and a creamy cornmeal base. Perfect served with a shredded Vermont White Cheddar, guacamole and corn chips.
