Description

Easy Arugula Salad with Lemon Vinaigrette is simple to make, requiring just a few ingredients and 5 minutes prep. In just 10 minutes you have a healthy lunch option that's full of flavor.


Ingredients

Scale
  • 2-3 cups baby arugula
  • olive oil or avocado oil spray
  • 1/2 lemon
  • 1/2-3/4 Tbs Everything But the Bagel Seasoning**
  • 3 oz. of cooked protein (tuna, chicken, turkey, etc.)
  • ADDITIONAL OPTIONAL TOPPINGS: English peas, asparagus, broccoli, shredded carrots, tomatoes, bell peppers, or anything else you like!

Instructions

  1. Add arugula to a large salad bowl. Spray the arugula with the olive oil spray, toss and then spray again. Repeat until the arugula is lightly covered in olive oil. Don't over-do it.
  2. Lightly squeeze the juice from the lemon 1/2 over the salad. Reserve some of the lemon juice, you can always add more, but can't take it off. If you get too much lemon, the salad will be too sour.
  3. Sprinkle the bagel seasoning over the salad. Toss to combine. Taste and adjust as needed. Allow salad to sit about 5 minutes to soften the arugula.
  4. Top the salad with your protein of choice and any additional toppings. Serve immediately.

Notes

** Everything But the Bagel Seasoning can be found in the Spice Aisle of most grocery stores. I get mine from Trader Joe's.
