Description

This Green Fruit & Veggie Juice is a fresh, lightly sweet juice made with cucumber, spinach, apple, pear, carrot, lemon, and optional ginger. Everything is blended first, then strained for a smooth, refreshing juice that’s easy to drink and simple to make at home without a juicer.


Ingredients

  • cucumber (1, peeled and chopped)
  • baby spinach (1 cup, rinsed)
  • apple (1, peeled, cored, and chopped)
  • pear (1, peeled, cored, and chopped)
  • carrot (1, peeled and chopped)
  • lemon juice (from 1 lemon)
  • fresh ginger (½ teaspoon minced, optional)
  • water (½ cup)


Instructions

  1. Add cucumberbaby spinachapplepearcarrotlemon juicefresh ginger, and water to a high-speed blender. Blend until completely smooth.
  2. Place a nut milk bag or fine mesh strainer over a large bowl or mason jar. Pour the blended mixture into the strainer and gently squeeze until all liquid is extracted. Discard the pulp.
  3. Serve immediately, or refrigerate in a sealed container for up to 24 hours.

Notes

This recipe can be doubled in a large high-speed blender, but tripling it will likely exceed the blender’s capacity. If you need more, blend in batches.

Peeling the cucumber, apple, pear, and carrot creates a smoother juice and improves yield when straining.

A nut milk bag gives the smoothest result, but a fine mesh strainer works well if that’s what you have.

This juice is best enjoyed fresh, but it can be stored in a sealed jar in the refrigerator for up to 48 hours. Stir or shake before drinking.
