I did not.
In fact.. had I passed on opening up Instagram this morning I may have missed out on this holiday entirely. I mean seriously, who knew that chocolate chip cookies have their very own day in which we celebrate them.
I don't normally acknowledge random days that are made up by who knows who. BUT you guys, when I actually do something that is seemingly well thought out (albeit by accident), well.. I gotta embrace it and claim it as a win!
I know what you're thinking... "Peanut Butter and Chocolate Chip Energy Balls are NOT the same thing as cookies."
Ok, ok.. you got me, but I'm saying it's close enough!!
These guys are chocolate chip cookie dough's older, wiser, in better shape big brother and once you try them, you're going to be hooked!
With one ball containing an impressive 4g of protein... these little guys are sweet cutesy little things that are going to keep you filled up. They are perfect to keep around for grab-n' go breakfasts, snacks, or even for a little after dinner treat.
Throwing them together couldn't be simpler. Just toss the ingredients into a food processor, pulse, form into balls and freeze. You read that right.. no baking involved! I told you not to skip out on this one.
The final result is a yummy dessert/granola bar type situation that is strangely reminiscent of chocolate chip cookie dough. Now keep your expectations in check... you're not going to confuse them with eating one of Grandma's homemade chocolate chip cookies, BUT they are a nice health conscience substitute when you are craving something tasty!
Time Saving Tips and Tricks
Prep: When the recipe is so simple, there really isn’t any reason to spend time prepping. The most time consuming part of this recipe is actually forming the balls. HINT… this is a great job for young helpers.
Make Ahead: Yes! This is a perfect make-ahead recipe. In fact, I recommend it. When the balls are first rolled, they are a bit sticky from the dates and honey.
Freezer: This is my favorite way to store energy balls. They will keep for several months. To freeze, arrange balls in a single layer on a baking sheet. Freeze for 2-3 hours, or until balls are frozen through. Remove from freezer and store in an airtight ziplock bag. Balls will store for several months. To serve.. remove desired amount of balls from freezer, allow them to thaw for 5 or 10 minutes on the counter.

Peanut Butter Chocolate Chip Energy Balls

Description
Easy, 8 ingredient No-Bake Peanut Butter Chocolate Chip Energy Balls are packed with protein, healthy fats and fiber. A perfect grab-n-go breakfast or snack.
Ingredients
- 1 cup cashews
- ½ cup rolled oats
- 5 pitted Medjool dates, about ½ cup
- 1 Tbs honey
- 1 Tbs peanut butter
- ½ tsp pure vanilla extract
- ¼ tsp salt
- 3 Tbs mini dark chocolate chips
- 1 tsp water
Instructions
- In the bowl of a food processor, add cashews and rolled oats. Process on high until a fine powder forms. Do NOT over pulse, the cashews will turn into cashew butter.
- Add the dates to the food processor. Process until dates are finely chopped.
- Add the honey, peanut butter, vanilla, salt and water. Process until mixture forms a ball. Dough should stick together when squeezed between thumb and forefinger. If it is too dry, add more water ½ teaspoon at a time.
- Add chocolate chips and pulse 5-7 times or until chocolate chips are fully incorporated.
- Roll dough between hands to form balls that are approximately 1" in diameter. Once balls are rolled, arrange them on a baking tray that has been covered with parchment paper or a silicone liner. Chill in freezer for 30 minutes.
- Enjoy! Extra balls can be stored in the refrigerator for up to a week or the freezer for up to a month (possibly longer).
Notes
- Finding mini chocolate chips with recognizable ingredients can be a challenge. I often purchase a high quality chocolate bar (72% cacao or higher) and use a rolling pin to break it into tiny pieces.
- Make sure that you pit the dates! They will ruin the blade on your food processor if you forget. I may or may not be speaking from experience, lol.
