Spring break is finishing up here in Kentucky, and you guys.. I've got the whole "Spring Break Vacation" thing down.
I did ABSOLUTELY nothing out of the ordinary. The big boys went to visit their Mimi and Poppy in Tennessee and the rest of the city, well.. they went to Florida or somewhere equally as fantastic. Me, I enjoyed an "empty city." No traffic. No lines.
Equally fabulous was the fact that with the older boys gone, there was no school drop-off/pick-up, sports, art lessons, extra dinner requirements and to be completely honest, I had NO IDEA how much time and energy raising little boys takes. I feel compelled to tell you.. I miss them like crazy. Buuuuut, having an easy with week with just Cruz and I, well... it was really nice.
Today while Cruz took a huge nap (which he could do since there was no school pick up), I was able to test a few flatbread pizza recipes in the kitchen. This chicken sausage version was my hands. down. favorite. I even got a text from Joe (who was in the family room), telling me this was a "good one." Poor guy is the official taste tester for Simply Sissom which often requires him to eat meals that are best described as sub-par.
Chicken sausage flatbread pizza comes together quickly (think 10-ish minutes), uses simply ingredients and best of all, since we are using flatbread as the crust.. no dough making required. I hate making pizza dough.
The ingredients are flexible. The zucchini is a bit different, and make no mistake, if my boys were home I would leave it off. That said, I've got to tell you, I think it compliments the flavors of the other ingredients perfectly. If you would prefer bell peppers, broccolini, onions, or no veggies at all.. you do you. You can't mess up anything that combines gooey mozzarella, spicy sausage and garlic-y flatbread.
Time Saving Tips and Tricks:
Prep: To get a jump start on this recipe, you could brown the sausage and roast the zucchini ahead of time. Both can be stored in the refrigerator in a covered container or sealed bag for several days.
Make Ahead: To make ahead, assemble pizzas according to recipe directions, but don't cook. Instead, wrap them in plastic wrap and store them in the fridge until ready to bake. You should add a little extra sauce as the pizza will likely dry out a little bit while it sits in the fridge.
Freezer: To freeze, you can assemble the pizza according to recipe directions, but leave out the zucchini. Veggies, once cooked don't freeze well. You could add them before baking the pizzas or just leave them out, the pizza will still taste great. Just wrap the assembled pizzas in plastic wrap and pop them into the freezer. To bake, just pop them into the oven and add some extra cook time to the original recipe.

15-Minute Chicken Sausage Flatbread Pizza - a quick, healthy, weeknight-friendly dinner option. The perfect real-food alternative to take-out pizza.
Ingredients
- 1 zucchini
- 3 tsp. Italian seasoning
- olive oil
- salt/pepper
- 1 lb. ground Italian chicken sausage
- 1 tsp. oregano
- 4 naan flatbreads
- 1-14oz. can crushed tomatoes
- 1 ½ cups shredded mozzarella cheese
- 2 tsp. chili flakes
Instructions
- Preheat broiler to high (or 500 degrees) and line a baking sheet with parchment paper. Dice zucchini. Place diced zucchini on baking sheet. Toss with a large drizzle of olive oil. Season with salt, pepper and 1 teaspoon of Italian seasoning (we will use the rest later). Broil until browned and tender, about 5-7 minutes. Transfer zucchini to a small bowl and set aside. Adjust oven temperature to 450.
- In a large skillet, heat 1 Tbs. of olive oil. Add sausage, oregano, and 1 tsp. of Italian seasoning (we will use the rest later). Cook for 4-6 minutes, or until sausage is browned and cooked through. Stir frequently. Remove from heat, and set aside.
- Place flatbreads on baking sheet used for zucchini. Evenly spread with crushed tomatoes (you may have extra). Season with salt, pepper and remaining Italian seasoning. Top with mozzarella, broiled zucchini, and remaining sausage. Bake in oven until flatbreads are golden brown and cheese is bubbly, 4-6 minutes. Remove from oven and let cool for 1-2 minutes. Add chili flakes ( to taste) and sprinkle with oregano. Cut into slices and serve.
