    Buffalo Chicken Zucchini Boats

    Buffalo Chicken Zucchini Boats - a simple stuffed zucchini recipe that combines the flavors of your favorite buffalo wings with fresh summer veggies.

    You can never go wrong with a recipe that combines QUICK + EASY.

    Add in the fact that these guys are stuffed with spicy buffalo, browned bits of sautéed chicken, a smothering of homemade greek yogurt ranch, and a shmear of soft herbed garlic cheese and it become obvious.. this recipe is about to become a family favorite.

    Buffalo style zucchini boats are one of my favorite variations of stuffed zucchini, but these Lasagna Stuffed Zucchini Boats are a very very close second!

    What Ingredients Do I Need?

    • Olive Oil
    • Zucchini
    • Ground Chicken
    • Greek Yogurt
    • Dill
    • Spices
    • Shredded Mozzarella
    • Soft Garlic Herb Cheese (I like Boursin)

    How Do You Make Buffalo Chicken Zucchini Boats?

    Make the Chicken Buffalo Filling.

    Slice and hollow the zucchiinis

    Step 1: Buffalo Chicken Zucchini Boats. Half zucchini and hollow out the center.

    Crumble Boursin Garlic and herb Cheese into the hollowed out zucchini.

    Step 2: Buffalo Chicken Zucchini Boats - Add crumbled cheese to the hollowed zucchini.

    Load the zucchini boats up with buffalo chicken meat.

    Step 3: Buffalo Chicken Zucchini Boats. Add the buffalo chicken filling to the zucchini boats.

    Top with a sprinkle of mozzarella cheese and bake at 350 degrees for 25 minutes.

    Step 4: Buffalo Chicken Zucchini Boats. Sprinkle the zucchini with mozzarella cheese and bake.

    FAQ's - Buffalo Chicken Zucchini Boats:

    What is Garlic and Fine Herb Boursin Cheese and where can I find it?

    Boursin Cheese "is a delicious blend of delicate garlic, fragrant parsley, and mild chives artfully folded into authentic Gournay Cheese." Can you tell that I copy and pasted that sentence, lol. It can be purchased in most grocery stores. You can sub ricotta or cream cheese if you are unable to locate this product.

    Can Buffalo Chicken Zucchini Boats be made in advance?

    Zucchini Boats can be made up to 1 day in advance. Follow recipe directions, but do not bake. Instead, wrap the baking sheet tightly with plastic wrap and store in the refrigerator. To heat, follow recipe directions.

    How do you hollow out a zucchini so that it can be stuffed?

    My buffalo chicken filling is too thin, how do I thicken it?

    If your filling is too thin, cook longer than recipe directions suggest. You can also add some extra cheese.

    Can I sub ground beef or turkey for the ground chicken?

    You can! I have made this recipe with all of the above. If using beef, know that the filling doesn't thicken as easily. I usually add about ¼ cup extra cheese to compensate.

    Description

    Buffalo Chicken Zucchini Boats - a simple stuffed zucchini recipe that combines the flavors of your favorite buffalo wings with fresh summer veggies.


    Ingredients

    Scale
    • 4 large zucchini
    • 1 Tbsp olive oil
    • 2 lbs. ground chicken
    • salt and pepper
    • 1 cup plain Greek Yogurt
    • ½ cup buffalo sauce
    • 2 tsp dried dill
    • 1 tsp garlic powder
    • 1 cup shredded mozzarella + more for topping
    • Garlic and Fine Herb Boursin Cheese (ricotta can be substituted)

     


    Instructions

    PREPARE ZUCCHINI:

    1. Wash zucchini and slice in half lengthwise. Use a spoon to hollow out the centers, leaving about ¼" edge all the way around the zucchini. This helps the zucchini hold it's shape.

    Make The Buffalo Chicken Filling:

    1. To a large skillet over medium heat,  add olive oil and ground chicken. Season liberally with salt and pepper. Use a wooden spoon to break the meat apart, stirring frequently until chicken is no longer pink.
    2. While chicken is cooking, mix yogurt, buffalo sauce, dill, garlic powder, ½ teaspoon salt and ¼ teaspoon of pepper together in a small prep bowl. Set aside.
    3. Once the meat is cooked, add 1 cup of the buffalo/yogurt sauce (you can use the rest to drizzle over top when serving) and 1 cup of shredded cheese. Mix. Stir frequently for about 5 minutes or until cheese is melted and at least ½ of the liquid has evaporated. Remove from heat and allow to sit for 5-10 minutes to thicken.

    Assemble Zucchini Boats:

    1. While the filling thickens, crumble ⅛ of the Boursin cheese into each hollowed out zucchini. 
    2. Place a generous amount of filling over the Boursin cheese and top with a sprinkle of mozzarella cheese.
    3. Bake zucchini boats at 350 degrees for 20-25 minutes or until the zucchini is tender and the cheese is melted through. Cooking times will vary based on the size of your zucchini. Serve immediately.
