    Friends, readers, good avocado loving people of the world: let me introduce you to Super Simple 5-Minute Guacamole.

    Loaded with avocados (obviously), diced onion, tons of citrus, spicy jalapeño and juicy tomatoes, it might be my favorite throw-together recipe (read: very little effort required) of all time ever ever ever. I eat it with, I mean, literally, everything. Veggie Burgers, salads, fresh veggies, tacos, you name it.

    This Super Simple 5-Minute Guacamole is adaptable, quick and extremely delightful. It has pretty much become an obsession over the last couple of weeks. Full disclosure.. I've made it an inappropriate amount of times since it came into my life, no judgement allowed.

    Super Simple 5-Minute Guacamole is easy to make, requiring 6 basic ingredients and 1-bowl. Creamy mashed avocado combined with lemon and lime citrus juice, tomato, onion and a bit of jalapeño for a bit of heat.

    As mentioned, this guac pairs perfectly with virtually anything, but my favorite is homemade pita chips. Not only do you feel a little bit "Martha Stewart like" (homemade chips = domestic diva status), but homemade allows you to control the quality and quantity of the ingredients that you are using.

    Just chop a few whole-wheat pitas into triangles, brush em with a little EVOO and sprinkle with your favorite seasoning blend (I like salt, pepper and garlic powder). Pop em in the oven for 10-12 minutes and you're ready to get dipping.

    This would make a delicious appetizer for parties, BBQ's or just lazy days where all you want to do is binge watch Netflix while snacking on something yummy. I called it "dinner" last night (ok and for lunch too), so there's really no judgement on how you choose to enjoy this simple dish.

    Time Saving Tips and Tricks

    Prep: This guacamole comes together quickly without any prep, but if you are doubling or tripling the recipe to feed a crowd sometimes it’s nice to get a bit of head start. You can pre-chop the onions, jalapeño, tomatoes and cilantro. They can be stored in the fridge in the same bag (they end up together in the guacamole anyway).

    Make Ahead: Unfortunately, guacamole that has been made ahead of time is well, ugly. If serving to guests, fresh is best. You CAN make the homemade pita chips ahead of time. Just store them in an airtight container. They will keep for up to 3 days.

    Freezer: I have heard rumors that it can be done, but I haven't tried it. I had planned to try this out with our leftovers AANNNNND then.. everyone ate all of it. If you have knowledge on this topic.. let us know in the comments below.

    Ingredients

    Scale

    FOR GUACAMOLE:

    • 3 avocados, halved and roughly chopped
    • ½ red onion, finely chopped
    • ½ lemon, juiced
    • ½ lime, juiced
    • ½ - 1 jalapeño (your guac, your choice), seeded and chopped
    • ⅓ cup grape tomatoes, diced
    • salt land pepper to taste (amount varies based on personal preference and size of avocados)

    FOR HOMEMADE PITA CHIPS:

    • 1 package of whole wheat pita bread
    • 1 Tbs olive oil
    • ½ tsp garlic powder
    • salt
    • pepper

    Instructions

    FOR GUACAMOLE:

    1. To a large mixing bowl, add avocados. Use the back of a fork to mash them to desired consistency, I like some chunks.
    2. To the mixing bowl, add onion, lemon and lime juice, jalapeño tomatoes, salt and pepper. Mix to combine.
    3. Taste and add more seasoning as needed. Serve immediately to avoid discoloration.

    FOR HOMEMADE PITA CHIPS:

    1. Heat oven to 400 degrees and cover a baking sheet with parchment paper.
    2. Slice each pita into 8 triangles and arrange in a single layer on prepared baking sheet. Brush each pita chip with olive oil and sprinkle with garlic powder, salt and pepper. Flip chips and repeat on opposite side.
    3. Bake for 10-12 minutes, or until pitas are golden brown. Serve immediately or store in an airtight container.
